Crock Pot Chili

Today we were on the schedule to work all day so we decided to make use of the crock pot. While I was cooking dinner last night, Dana got everything ready for tonight's meal. All we had to do was take it out of the refrigerator and turn it on before leaving for work. When we got home, Dana baked some corn muffins to go with it.

Crock Pot Chili

1 lb ground beef
1 onion chopped
1 red pepper chopped
1 green pepper chopped
1 clove garlic finely chopped
1 can diced tomatoes (14.5 oz), undrained
1 can (8 oz) tomato sauce
1 tbs chili powder
3/4 tsp ground cumin
1/4 teaspoon salt
1/4 tsp pepper
1 can (15-16 oz) pinto beans, drained

Dana pre-cooked the meat and put everything in the crock pot last night except for the beans. We added 1 and 2/3 cups of water. Before leaving for work this morning, we turned it on and cooked on low for about 8 hours. The beans were mixed in when we got home (about 15-20 minutes before serving).
